Meatballs

This recipe makes 30 40 little ones, about the size of a large sprout.

You need:

  • 250g minced beef
  • 250g minced pork
  • 1 egg
  • 2 ½ tbsp finely chopped onion
  • 60ml toasted breadcrumbs
  • 5 tbsp butter
  • 2 boiled potatoes mashed up
  • Salt and pepper
  • For the sauce:
  • 100ml cream
  • 200ml beef stock
  • 1 tbsp plain flour
  • Soy sauce

1.
Fry the onion until golden in 2 tbsp butter and cool

2.
Add the all the ingredients to a bowl and mush together

3.
Season with salt and pepper

4.
Using two teaspoons rinsed in water, or your hands, shape the meatballs into small balls and transfer to a floured chopping board, then fry quite slowly in plenty of butter until cooked through

5.
Keep warm in the oven while you make the sauce in the same pan using the flavours from the meatballs

Sauce serves 4:

1.
Add the cream and half the stock to frying pan and heat until bubbling

2.
Add flour to thicken

3.
Add soy sauce and season to taste

Serve the meatballs with the sauce and freshly boiled potatoes, a green salad or veg and if you are feeling super Swedish lingonberry sauce or gherkins
